Bake With Me: Autumn Edition

I don't know about you, but when the weather starts to turn, it like a switch is flicked in my brain. I go from making fruit salads and yoghurt bowls for pudding to cakes and crumbles. Autumn is the start of baking season in my head, so I thought I'd share with you my favourite things to bake.

In my opinion, one of the most underrated baked goods is the humble snickerdoodle. A lot of people I know haven't even heard of them, so if that's you too, you absolutely have to try them! They're a soft cakey-cookie flavoured with cinnamon and rolled in cinnamon sugar before baking. I know. It's a basic cookie recipe with the added fun of rolling them in the spiced sugar, which realistically, feels a bit like play-doh. And I feel like most (if not all) adults secretly love playing with play-doh.

They come out of the oven soft and cakey, rather than chewy, and go perfectly with a cup of tea. I use the Loving It Vegan recipe, which can be found here: https://lovingitvegan.com/vegan-snickerdoodles/

My second favourite recipe is a good ol' apple crumble, which is practically a weekly bake in our house. In fact, I didn't actually bake it for the video because my boyfriend had already made one! A warm apple crumble and custard on a cozy evening is just bliss. I would say more to try and convince you, but I don't really think that's necessary - everyone loves apple crumble, right? Controversial, but crumble is better than pie.

Lastly, Devon apple pudding, which is less of a pudding, and more of a cake. Now, I'm a Yorkshire lass through and through, but my mum grew up in Devon, and this is her mum's recipe. Ridiculously easy, and crammed with apple, this is another one perfect with custard and a cup of tea.

Devon Apple Pudding:

4oz margarine

4oz sugar

2 eggs (to veganise, you could use flax egg, or bicarb and vinegar - but I haven't tried either)

6oz self-raising flour

8oz chopped apple

Pinch of salt

Cream the marg and sugar together, and beat in the eggs. Fold in flour, salt and chopped apple. Bake at 180 degrees C for 40-45 mins in a 20cm tin.


See what I mean about being easy? I also didn't bake this for the video because we already had most of a crumble and the snickerdoodles to satisfy our sweet tooth, but I'll definitely be making Devon apple pudding before the season is over.
